Ingredients (Serve 4)
2 carrots, 1 red capsicum, 1 zucchini, 100g spinach, 150g sprouts, 4 fried eggs, salt and pepper, cooked white rice, sesame oil, chilli sauce.
1⁾ Heat the oil in a frying pan and sauté the julienned carrots with some salt and pepper for 1-2 minutes. Set aside. Repeat with the red capsicum and zucchini and set aside after sauteing each item.
2⁾ Divide the rice between 4 bowls and top with the sauteed vegetables, spinach, bean sprouts, and a fried egg. Drizzle 1 teaspoon of the sesame oil over each bowl.
3⁾ Drizzle each bowl with the Chilli Sauce to the individual's spice level and mix together all the ingredients in the bowl before serving.
